You Will Need: 1 - 10-24 lb turkey (when purchasing a turkey for brining, choose a natural or no additives added bird that has not been injected with salt or seasonings), thawed; 3 quarts water (12 cups); 2 cups sugar; 1/2 cup vinegar (apple cider or white); 5 quarts ice water; large stock pot; large cooler with ice or large roasting pan. Dissolve brine mix and sugar in 3 quarts water over medium heat in a stockpot. Stir until dissolved, do not boil. Chill brine seasoning completely in the refrigerator before adding to turkey. Prepare the turkey by cleaning and removing the neck and giblets from inside of turkey. Place turkey breast side down inside the plastic brining bag into the cooler with ice or a roasting pan for support. Do this before you add the liquid brine mixture. Pour cooled brine seasoning, vinegar and 5 quarts ice water into the brine bag with turkey and seal tightly making sure all air is removed.
