Easy Preparation! Prep Time: 5 minutes. Cook Time: 25 minutes. You will need: 1 pkg. Pioneer Bayou Jambalaya Meal Seasoning Mix. 2-1/4 cups water. 1 Cup parboiled long-grain rice meat of choice – smoked sausage, cooked chicken, or shrimp (Add cooked shrimp during last 5 minutes of cooking time). Optional: 1/2 cup chopped green bell pepper, 1/2 cup yellow onion, and 1 (14.5 oz) can diced tomatoes (Saute peppers and onions in 1 tbsp oil. Proceed to Step 1, and add diced tomatoes before bringing to a boil). (1) Mix seasoning mix with water in 3-quart saucepan, and bring to a boil. (2) Add rice and meat of choice. (3) Simmer covered for about 20 minutes until rice is tender. (4) Remove from heat, and let stand for 5 minutes. (5) Fluff with a fork before serving.
