How to Make Pico de Gallo Tacos: 1. Shred Chicken: Shred roasted chicken, if needed, discarding bones and skin. 2. Season Chicken: Heat 2 tablespoons olive oil in large nonstick pan over medium heat. when oil is shimmering, add shredded chicken, then taco seasoning. Cook, stirring, until spices are toasted, 3-5 minutes. Add 1/2 cup water and cook, stirring, until water is evaporated, 1-2 minutes more. Remove pan from heat. Taste and season with salt. 3. Make Slaw: Halve lime; cut 1 half into wedges for serving. In a small bowl, toss together cabbage, carrots, juice of 1/2 lime, 2 teaspoons olive oil, and 1/4 teaspoon salt. 4. Warm Tortillas: Stack tortillas, wrap in a damp paper towel, and microwave in 15-decond intervals until warmed through, about 1 minute total. 5. Assemble Tacos: Transfer warm tortillas to serving plates and layer with spiced chicken, cabbage slaw, pico de gallo, and cotija. Drizzle over creamy cilantro dressing and serve with lime wedges for squeezing over. Enjoy! Perishable. Keep refrigerated.
