You Will Need: 1 large egg; 4 tablespoons unsalted butter (1/4 cup); bowl & spoon (or fork); cookie sheet. Preheat oven to 350 degrees F. Grease (or use cooking spray) the bottom of a cookie sheet, or line the sheet with a non-stick baking mat. Melt 4 tablespoons of unsalted butter. The butter should be melted but not boiling. Tip: Place butter in a microwave safe dish, cover with a paper towel to prevent spattering, and microwave for about 40 seconds. In a medium bowl, blend together melted butter, (1) baking soda, (2) vanilla powder, and (3) salt until smooth. Add 1 large egg, (4) cane sugar, (5) brown sugar, and (6) flax. Beat until fluffy and lightens in color. No egg? No problem! Mix the included flax with 3 tablespoons warm water, and let sit for 10 minutes. Stir well and add to mixture. Stir in the (7) flour and (8) chocolate chips until no flour is visible. Scoop about 2 tablespoons of dough at a time onto the cookie sheet, making 10 to 13 cookies. Did you know? Over mixing the flour develops the gluten, making a tough cookie, so be careful not to over stir. Bake for 11-13 minutes until the edges of the cookie barely begins to brown. Let sit on cookie sheet for 2-3 minutes, then transfer to a wire rack to finish cooling. Tips and Suggestions: Try Adding: walnuts, macadamia nuts, hazelnuts, pecans, toffee bits, or rolled oats. Microwave Cooking: Cook on high for 30 to 50 seconds in a microwave safe dish. High Altitude Cooking: You may want to increase the oven temperature. Using canola or vegetable oil: replace the butter with 4 tablespoons of oil. For a low-fat version: replace the butter with 3 tablespoons of applesauce. Vegetarian and Vegan: Replace the butter with 4 tablespoons of canola or vegetable oil, and replace the egg with egg replacer or the flax mix shown above.
