Main Ingredients

  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces mascarpone cheese
  • 1/4 teaspoon almond extract
  • 2 cups cold brew coffee
  • 24-28 lady finger cookies
  • cocoa powder

Cooking Instructions

Step 1

With a stand or hand mixer, beat whipping cream, sugar and vanilla until soft peaks form. Add in mascarpone cheese and almond extract and continue mixing until stiff peaks are formed.

Step 2

Break lady fingers into 3 to 4 pieces and dip in coffee. Place in jars for the first layer. Use the back of a spoon to create a solid layer. Spread half of the whipped cream mixture on top of the lady fingers. Repeat process with second layer of lady fingers and cream mixture.

Step 3

Dust the top of dessert with cocoa powder. Refrigerate for 3-4 hours, up to overnight.

Don't soak the lady fingers in the coffee, as they will fall apart. Just a quick dunk in the coffee is enough.

A tablespoon of Amaretto can be used in place of almond extract.

To easily layer the whipping cream layer, pipe into jars using a pastry bag. Or, load into a zip top bag, and cut off one of the end corners to create an easy, disposable pastry bag.
