Irish Mashed Potatoes
A twist on traditional colcannon, using kale! Creamy golden potatoes, kale, bacon, and chives make for a fresh but hearty way to celebrate spring. Serve as an easy side, or by the bowlful!

- 2 pounds Yukon Gold potatoes
- 1 cup finely chopped kale
- 6 tablespoons unsalted butter
- 1/2 cup warmed milk
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 cup minced chives
- 1/4 cup crumbled bacon
Place potatoes in a saucepan and cover with water. Bring to a boil on medium-high heat. Continue to simmer 15-17 minutes, until potatoes are tender.
Drain water and add kale and butter to pan, covering with lid. Let rest 5 minutes. Add milk, salt and pepper to pan and mash potatoes. Stir in chives and bacon. Serve.
