Directions
For food safety and quality, follow the cooking directions. Refrigerate leftovers. You will need: 1-1/2 Cups water. 3 tablespoons water for dressing. 2 tablespoons olive or vegetable oil. 1 Medium cucumber cut in bite-size pieces (about 1-1/2 cups). Directions: 1. Bring 1-1/2 cups water to boil in 2-quart saucepan. Stir in couscous blend. 2. Reduce heat. Cover; simmer 10 minutes, stirring occasionally until tender. Drain. Rinse with cold water; drain well. 3. While couscous in cooking, whisk together 3 tablespoons water, oil, and vinaigrette mix in medium bowl. Add cucumber pieces; stir well. 4. Add cooked, rinsed and drained couscous blend to cucumber mixture; stir to combine. 5. Serve immediately or refrigerate.
Add cucumber & olive oil. Stir-in Ideas: Stir any of the following into your finished salad: Sliced black olives. Diced roasted red pepper. Cherry tomatoes. Diced feta cheese.
