Toscana, Rubio is a modern style of Sangiovese that ‘successfully transmits the vivacity of fragrances from San Polo’s pristine natural environment.’ Rubio is farmed organically at the San Polo's estate, located in the original Brunello production zone of Montalcino. Estate grown fruit is hand-harvested & vinified within hours of harvest. Wine is cryomacerated prior to a low-temperature, native yeast fermentation in conical, stainless steel tanks. Finished wine is racked off the skins after fermentation to prevent additional extraction and wine is aged for an additional 10 months prior to bottling. Aged for a minimum of 4 months in bottle before release, Rubio is a balanced Sangiovese in its purest form. With an intense bouquet of red cherries, violets, blackcurrants and subtle spicy notes, this wine is well-structured and balanced. The 2020 vintage received 90 points from James Suckling.
