Directions Basic Cooking Instructions: Wash 1 cup of beans well then soak for 2 hours. Saute lightly 1/2 cup of diced onion, 1 diced carrot, 2 diced celery ribs. Stir in 2 tbsp of butter, 1 tbsp of vegetable oil, 1-1/2 tbsp flour, 1-1/2 tbsp curry powder, cook for 3 minutes. Add soaked lentils, 4 cups of chicken broth and 1 bay leaf. Simmer for 15 minutes. Add 1/2 cup tart diced apples, 1/4 tsp pepper, 1 chopped tomato, and 1/2 tsp of grated lemon rind. Simmer for another 15 minutes. Stir in 1/2 cup of cream of coconut milk immediately before serving. Serve over steamed basmati rice.
