Kanonkop: Means Cannon Hill and is derived from the days when Cannons were fired to signal the arrival of Dutch trade ships into Cape Town Harbour. Varietal: 100% Cabernet Sauvignon. Viniculture: Fermentation took place in open concrete vessels for 5 1/2 days at 29 degrees C. Cap punched down manually every 2 hours. Style: Produced in the traditional Kanonkop fashion-full bodied with a deep ruby color. Gentle oak and tannin structures give this wine a long, lingering and smooth finish.
