Chopped mushrooms add meaty texture & flavor to sauces. 2. Fish. Leave mushrooms whole or slice lengthwise for best appearance. Saute gently in butter. Finish with white wine, lemon & fresh herbs. Lay on top of broiled or sauteed fish fillets. 3. Eggs. Slice or chop, then saute in butter before adding to omelets or scrambled eggs. 4. Veggies. Cooked mushrooms go with all vegetables, but pair particularly well with dark green vegetables - broccoli, green beans, chard & spinach. A drizzle of balsamic vinegar brings out the best. 5. All by themselves. As a starter or garnish. Saute over medium high heat.
