The sweet, slightly nutty flavor of coconut is one our favorites and we thought it would be a wonderful addition to our line of pancake and waffle mixes. This unique mix makes light and fluffy pancakes and mouth-watering waffles that are full of sensational flavor from toasted coconut. Try topping pancakes or waffles with carmelized bananas and a little confectioner's sugar for an incredible Sunday morning brunch. Add chopped pecans ice cream and drizzle with our warmed dulce de leche sauce for waffles with a decidedly Caribbean twist. Make silver dollar-sized pancakes and spread with our fig & walnut butter. Directions Toasted Coconut Pancakes: 1 large egg; 2/3 cup milk; 1 cup Toasted Coconut Pancake & Waffle Mix; 3 tbsp. unsalted butter, melted. Beat egg and milk together. Add dry mix and blend well. Stir in melted butter and mix thoroughly. Ladle onto 350 degrees F griddle and flip when air bubbles begin to pop. Turn once and cook until done. (Makes approximately 5-6 plate-size pancakes.) Toasted Coconut Waffles: 1 large egg; 2/3 cup milk; 1 cup Toasted Coconut Pancake & Waffle Mix; 3 tbsp. unsalted butter, melted. Heat waffle iron according to manufacturer's directions. Beat egg and milk together. Add dry mix and blend well. Stir in melted butter and mix thoroughly. Ladle onto hot waffle iron and remove when golden brown. (Makes about 3-4 waffles, depending on size of waffle maker.) Canister makes approximately three batches.
