Directions Included: orzo; veggie blend; spices. What You Will Need: flat leaf parsley; cucumber. 1 tbsp olive oil. 2 tbsp water. 1 English cucumber, deseed & chopped. 1/4 cup fresh parsley, chopped. 1. In a large stock pot, boil 8 cups of water. Add the orzo and vegetable blend, bring to a boil and simmer for 8-10 minutes. 2. In a colander, drain and rinse well under cold water. Allow to drain for an additional 5 minutes. 3. While orzo is draining, in a large bowl whisk together water, oil and dressing mix. Add orzo, cucumber, and parsley. Stir to coat with dressing. 4. Allow salad to rest for 1 hour in the fridge to let flavors meld. Tip: Add crumbled feta cheese and cooked shrimp to our Orzo Cucumber Salad to take it from side dish to main dish.
