Flavor: Dark, bold, ripe raspberry fruit and strawberry jam flavors, with aromas of cedar, spice, and anise. Bright acidity and soft tannins. Food Pairing: Pair with barbecued, braised, stewed and spiced meat preparations, and it's good companion to earthy dishes featuring mushrooms and sausage. Vineyard: Grown on calcareous, sandstone and shale soils on bench-lands overlooking the Estrella River, east of Paso Robles city. Winery: Fermented in temperature-controlled stainless steel tanks for about two weeks, pressed off to age 9 months in tank and barrel.
