Sauvignon Blanc, Napa Valley, 2011
The 2011 growing season began with a very wet winter and spring, which delayed vine development and set the stage for a prolonged harvest. Cool summer weather fostered slow, even ripening of our Sauvignon Blanc grapes, which achieved optimal flavor concentration at lower sugar levels, with bright acidity. The result is a fresh, vibrant wine with lovely pink grapefruit, fig and gooseberry aromas and mouthfilling melon and ripe grapefruit flavors. Night harvesting and whole-cluster-pressing the grapes, plus partial barrel fermentation and five months' aging in neutral French oak, further accentuated this Sauvignon Blanc's rich, complex flavors. www.cakebread.com.
