Directions
Season roast with salt and pepper. Place fat side up in roasting pan. Insert ovenproof meat thermometer so tip is in thickest part of roast. Do not add water or cover. Cook in preheated 325 degree F oven for about 20 to 30 minutes per pound. Roast is done when internal temperature reaches 155 to 160 degrees. For ease in carving, let roast stand 15 minutes.
