Directions
If Using Beef: You will need if using beef: 1 cup milk; 1 lb lean ground beef; 2-1/4 cups hot water. For Topping: 1/3 cup milk. 1. Brown: Brown beef in 10-inch skillet; drain. 2. Stir: Stir in 1 cup milk, hot water, sauce mix and rice. Heat to boiling. 3. Simmer: Reduce heat. Cover; simmer about 20 minutes, stirring occasionally, until rice is tender. Meanwhile, stir 1/3 cup milk and topping mix in bowl. 4. Add: Remove from heat. Sprinkle with corn chips. Add topping. Refrigerate leftovers. If Using Chicken: You will need if using chicken: 1 lb uncooked boneless skinless chicken breasts; 1 tbsp margarine or butter; 1 cup milk; 2 cups hot water. For Topping: 1/3 cup milk. 1. Cook: Cut chicken into 1/2-inch pieces. Melt margarine in 10-inch skillet over medium-high heat. Add chicken; cook 3 minutes, stirring often. 2. Stir: Stir in 1 cup milk, hot water, sauce mix and rice. Heat to boiling. 3. Simmer: Reduce heat. Cover; simmer about 20 minutes, stirring occasionally, until rice is tender. Meanwhile, stir 1/3 cup milk and topping mix in bowl. 4. Add: Remove from heat. Sprinkle with corn chips. Add topping. Refrigerate leftovers. Add a Fresh Twist: For even more delicious cheese taste, top with shredded cheddar cheese. Top with chopped pickled jalapeno chiles to spice it up.
