You don’t need any special ingredients for these waffles, and they come together so quickly that they could easily be a weekday treat.
- 1¾ cups all-purpose flour,
- 2 tablespoons sugar,
- 1 tablespoon baking powder,
- ¼ teaspoon salt,
- 2 large eggs, lightly beaten,
- 1¾ cups milk,
- ½ cup vegetable oil or butter, melted,
- 1 teaspoon vanilla extract,
- Maple syrup (optional),
Preheat oven to 300°F. In a large bowl, stir together flour, sugar, baking powder and salt. Make a well in the center of the flour mixture; set aside.
In a medium bowl, whisk together eggs, milk, oil (or butter) and vanilla. Add the egg mixture all at once to the flour mixture. Stir just until moistened (the batter should be slightly lumpy).
Preheat oven to 200°F. Lightly coat waffle maker with cooking spray and preheat according to manufacturer's directions. Add batter and bake according to manufacturer’s directions. Transfer the waffle to the oven to keep warm. Repeat the process with the remaining batter. If desired, serve with maple syrup.
