Strawberry Shortcake Bellini
Beautiful and delicious, these Strawberry Shortcake Bellinis are sure to be a hit this summer!
Total cook time
- 1-pound strawberries, washed and destemmed, cut into quarters
- 1/4 cup granulated sugar
- 2 tablespoons water
- 1/2 cup whipping cream
- 1 750 milliliter bottle Prosecco
- 1/2 cup finely crushed vanilla wafers
- 1/2 cup granulated sugar
Add strawberries, sugar and water to a saucepan. Cook over medium heat until strawberries are soft. Remove from heat and blend with an immersion blender.
Strain puree through a fine mesh sieve and let cool completely. Add whipping cream when cooled and mix well. In a separate small bowl, stir to combine crushed vanilla wafers with the sugar.
To make cocktails, wet rim of champagne flutes with strawberry mix and dip into crushed cookie mixture. Divide remaining strawberry mixture between 4 champagne flutes and top with prosecco. Stir to combine. Serve.
