Lemon Rosemary Scallops
Dazzle your guests with fancy scallop skewers! Pro tip: Thoroughly dry the scallops before searing for better flavor. All you need for seasoning is salt, pepper and rosemary for a delicious seafood appetizer everyone will love.

- 12 large scallops
- 2 lemons (1 sliced into 6 pieces, 1 for juice)
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black peppe
- 1 tablespoon finely chopped fresh rosemary
Soak skewers in water, about 15 minutes.
Assemble skewers by threading scallop then lemon slice folded in half. Repeat until there are 3 scallops, with 2 lemon slices in-between each scallop, per skewer. Drizzle skewers with olive oil and juice from 1/2 lemon. Season with salt, pepper and rosemary. Place in refrigerator for 30 minutes.
Preheat grill to medium (375º-425º). Place skewers on grill for 3-4 minutes. Flip and grill an additional 2-3 minutes, or until scallops are opaque with good grill marks.
