Grilled Ricotta & Berry Flatbread

Berries and honey fold some sweetness into this savory ricotta flatbread. Switch it up by using cherries, peaches or plums. Any combo will create a fresh menu option bursting with flavor. This is a delicious and economical option for an appetizer or a light lunch.

Main Ingredients

  • 1 12-inch prepared pizza crust or naan bread
  • 1 cup whole milk ricotta cheese
  • 1 zest of 1 lemon
  • 1/2 tsp pure vanilla extract
  • 2 tsp honey
  • 2 cups assorted berries

Cooking Instructions

Step 1

Preheat grill to medium heat (350°-400º). In a bowl, mix to combine ricotta cheese, lemon zest, vanilla and honey. Spread mixture on crust and top with berries.

Step 2

Turn off middle burners for indirect grilling and place pizza crust in center of grill. Grill about 10-12 minutes, until berries are juicy and ready to burst. Remove from heat and let rest 5 minutes. Slice and serve.
