Balsamic Salad Jar with Roasted Chickpeas & Goat Cheese
This Balsamic Salad Jar is filled with fresh vegetables such as spinach, cauliflower, beets, and red onion. It is topped with flavorful Open Nature® sausage, creamy goat cheese, and roasted chickpeas. This dish is a simple, healthy summer salad that is perfect for any picnic or get-together.
- 1/4 cup Open Nature® balsamic vinaigrette
- 1/2 cup cauliflower, cut into small florets
- 2 tablespoons sliced red onion
- 1/4 beet, washed and thinly sliced or chopped
- 1 Open Nature® chicken & apple sausage, sliced on bias
- 3/4 cup fresh spinach
- 1 tablespoon goat cheese
- 3 tablespoons chickpeas, drained, rinsed and pat dry
Preheat oven to 450°. On a baking sheet covered with parchment paper, add chickpeas to one side and sliced sausage to the other. Spray chickpeas with non-stick cooking spray, then sprinkle with sea salt. Cook for 12 to 15 minutes, until chickpeas are crispy and edges of sausage are browned.
Pour dressing into a glass jar. Add cauliflower, beets and red onion. Add sausage. Fill with as much fresh spinach as it takes to almost fill the jar. Top with a scoop of goat cheese and roasted chickpeas.
Enjoy immediately or cover with a lid and refrigerate until ready to eat.
