Balsamic Salad Jar with Roasted Chickpeas & Goat Cheese

Main Ingredients

  • 1/4 cup Open Nature® balsamic vinaigrette
  • 1/2 cup cauliflower, cut into small florets
  • 2 tablespoons sliced red onion
  • 1/4 beet, washed and thinly sliced or chopped
  • 1 Open Nature® chicken & apple sausage, sliced on bias
  • 3/4 cup fresh spinach
  • 1 tablespoon goat cheese
  • 3 tablespoons chickpeas, drained, rinsed and pat dry

Cooking Instructions

Step 1

Preheat oven to 450°. On a baking sheet covered with parchment paper, add chickpeas to one side and sliced sausage to the other. Spray chickpeas with non-stick cooking spray, then sprinkle with sea salt. Cook for 12 to 15 minutes, until chickpeas are crispy and edges of sausage are browned.

Step 2

Pour dressing into a glass jar. Add cauliflower, beets and red onion. Add sausage. Fill with as much fresh spinach as it takes to almost fill the jar. Top with a scoop of goat cheese and roasted chickpeas.

Step 3

Enjoy immediately or cover with a lid and refrigerate until ready to eat.
