Baked Pinto Bean Flautas
These Mexican-inspired flautas make a great vegetarian meal or appetizer! Loaded with pinto beans, Greek yogurt, salsa and Colby Jack cheese, they’re baked, not fried. Dip them in salsa or guacamole and enjoy!

Main Ingredients
- 8-6 inch flour tortillas
- 1-15 ounce can Signature Kitchens™ pinto beans (rinsed and drained)
- 2 tablespoons plain Greek yogurt
- 2 tablespoons salsa
- 1 green onion (thinly sliced)
- 1 cup Colby jack cheese
- 1 Tablespoon extra-virgin olive oil
- ½ teaspoon kosher salt

Cooking Instructions
Step 1
Preheat oven to 375º. Mash pinto beans slightly in a mixing bowl with a fork. Add yogurt, salsa, green onion and cheese and mix well.
Step 2
Divide pinto bean mixture evenly into flour tortillas. Tightly roll tortillas into cylinder and place seam side down on baking sheet. Brush with olive oil and sprinkle with salt.
Step 3
Bake 13-17 minutes until crisp.
