It’s zucchini season—is it nutritious and what are some new ways to use it?

Nothing says summer like an abundance of zucchini, and we can’t get enough of this popular summer squash.

We also love zucchini’s nutrition profile. One cup sliced contains about 20 calories and is a terrific source of vitamin C, which helps keep cells healthy.

Zucchini is versatile, too—it shines in both sweet baked goods like muffins and quick breads, and in savory dishes like casseroles and pastas.

Here are a few of our favorite ways to use zucchini:

Shred and sauté with minced garlic and a dash of red pepper flakes; toss with hot cooked whole-wheat spaghetti.
Slice into rounds to dip into hummus or Greek yogurt dip.
Sauté with chopped tomatoes and basil in olive oil for a tasty side dish.
Dice and add to green salad.
Stew with tomatoes, eggplant and onions for a tasty ratatouille.
