We also love zucchini’s nutrition profile. One cup sliced contains about 20 calories and is a terrific source of vitamin C, which helps keep cells healthy.

Zucchini is versatile, too—it shines in both sweet baked goods like muffins and quick breads, and in savory dishes like casseroles and pastas.

Here are a few of our favorite ways to use zucchini:

Shred and sauté with minced garlic and a dash of red pepper flakes; toss with hot cooked whole-wheat spaghetti.
